Brownie Cookies-6911I’m not a big dessert person, but when it comes to brownies – I do have a soft spot for them in my heart. I can’t say no whenever someone offers me a good piece of brownie.

They are probably one of the simplest to make out of all desserts but always a favourite for everyone. I haven’t met anyone who dislikes brownies. I mean – you must be hating chocolates in general or just don’t like dessert if you don’t feel the same fondness toward brownies like the rest of us do.

Cookies on the other hand, is a hit and miss for me. I generally don’t prefer hard crumbly cookies, but I do love those that have goey chocolate or nutella melting in the centre. Yum!

Brownie CookiesCombining brownies and cookies though, is a pretty great idea! It really is the best of both worlds. I really admire whoever first thought of making cookies by using brownie mix. The texture of the brownie cookies turns to be quite similar to chewy and fudgy brownies, however, with slight crispy texture outside – resembling a cookie.

Another plus side, they also look more interesting and playful now that you can see the brownie cracks on top of these cookies.

Just like Donna Hay, you can also add a bit of varieties to the brownie cookies, in this recipe she paired them with peanut butter frosting. I bet they would taste heavenly too. But I am perfectly happy eating them as it is. Just these brownie cookies and a glass of cold ice coffee on a Sunday afternoon.

Brownie Cookies-6918I always love my brownies warm, that’s why I prefer these brownie cookies to be warm too when eaten, somehow the centre just gets chewier and the goey chocolate melts a bit. So soo good! I usually warm these babies up in the microwave (or even better, an oven) just for a few seconds until they are warm to touch. I recommend you try warming them up before nom-ing if you love chewy cookies like me.

Ingredients
  • 300 gr of dark chocolate, chopped
  • 40 gr of unsalted butter
  • 3 eggs
  • 150 gr of caster sugar
  • 30 gr of plain flour
  • 30 gr of cocoa powder
  • ½ tsp of baking powder
  • ½ tsp of salt
  • 1 cup of chopped nuts, optional
Instructions
  1. Combine butter and chocolate in a bowl and place it on top of the saucepan with simmering water without letting the water touches the bottom of the bowl. Stir lightly until melts completely and keep aside.
  2. In a big mixing bowl, whisk eggs and sugar for a few minutes until it becomes pale and foamy.
  3. Stir in flour, cocoa powder, baking powder and salt into the eggs mixture and mix until just combined. Add the melted chocolate and any chopped nuts into the mixture and whisk until texture becomes smooth.
  4. Cover the baking tray with baking paper and spoon the brownie mixture onto the baking tray, leaving reasonable spaces in between as the brownie will expand when baked in the oven.
  5. Baked cookies for 8-9 minutes in the preheated oven of 180 celcius until the top surface of the brownie cookies shows some cracks. Place them on a wired rack to cool completely.
