After my spontaneous ranting in the previous post about my unpleasant experience in applying for a tourist visa in Europe, I am pleased to announce that all the hard work is finally paid off – my tourist visa is approved and this only means one thing! I am going to Europe!!
I am currently researching about places to go, day trip to book, restaurants to visit and all other miscellaneous questions like – is it safe to drink tap water in Italy? or is tipping necessary in Europe? Any cultural issue that I have to watch out.
I am feeling very excited at the moment. This deserves celebratory breakfast. I want pancakes!
So I made these pancakes with caramelised bananas and salted caramel sauce. They looks real fancy, tasted awesome, and the best thing is that they are damn easy to make. To be honest, this is what I tend to make for breakfast if I only have the basic staples in my pantry (flour, butter, sugar, cream) and banana.
I made my pancakes using recipe from Taste. It always works for me!

- Caramelised banana
- 2 ripe bananas, divide into quarters.
- 1 tbsp of butter
- 1 tbsp of sugar
- Salted caramel
- 4 tbsp of sugar
- 1 tbsp of butter
- 2 tbsp of cream
- Pancakes and Toppings
- 2 serves of pancakes
- fresh raspberries
- almond flakes
- Sprinkle the chopped bananas with sugar. Heat butter on a frying pan and add bananas, cook over high heat until the surface becomes caramelised. Remove from heat.
- Place sugar in a non-sticky saucepan over medium-high heat. Cook for 4-5 minutes until the sugar is bubbly and brownish. Add butter and heavy cream into the caramel. Shake the saucepan gently and consistently for 2-3 minutes to smoothen the caramel. Add salt and shake the pan to combine. The texture of the caramel should be thick and smooth with dark brown colour.
- Place caramelised bananas on the pancakes and drizzle with salted caramel sauce. Add your preferred toppings and serve warm.
