If you are following my Instagram you would notice that I did a series of pancakes for breakfast this week. After having pancakes for four consecutive days (please click here to view all pancakes that I’ve made), I wanted to have something a little bit different and refreshing for my pancake recipe number 5.
I wanted to make something similar to Smoked Salmon Blini, so I used my leftover pancake batter as is and just added the toppings like smoked trout and creme fraiche, similar to Blini’s toppings. I also added some sliced radishes for an added crunchy texture, some sliced mandarins for citrusy flavour to balance out the saltiness of the smoked trout. The combination overall was perfect. My partner Raymond said he could probably eat 4-5 servings without getting sick of it.
The best thing about it is that no cooking is involved other than pan-frying the pancakes. The rest is just like preparing a bowl of salad – only chopping the ingredients and throwing things on the plate.
These pancakes with smoked trout and creme fraiche would be perfect for a crowd-gathering. Make the pancakes little bit smaller, maybe one-bite size for each pancake and it would run out so fast!
I made my pancakes using recipe from Taste. It always works for me!
- 100 grams of smoked trout
- 2 tbsp of creme fraiche
- 2 mandarins, thinly sliced
- 2 radishes, thinly sliced
- 1 tbsp of olive oil
- 2 tbsp of mandarin juice
- 2 serves of pancakes
- Mix sliced mandarins and radishes in a bowl. Whisk olive oil and mandarin juice in a small bowl and pour the vinaigrette over the salad. Toss to combined.
- Arrange salad on the pancakes. Top with creme fraiche and smoke trout. Season with salt and pepper.
