Seared Scallops with Cauliflower Puree and Bacon Crumbs

Here’s another dish that I made last week that was elegant and sophisticated. If you read my previous post, pan-fried fish with cauliflower and hazelnut, you probably noticed that I made too much cauliflower puree, so I had some leftover sitting in the fridge. For the second round, I decided to use some scallops to make a beautiful entree.

These scallops were seared in the pan with nothing other than salt and pepper for 1 minute each side, cauliflower puree reheated in the microwave, and I also made some bacon crumb by pan-frying diced bacon and breadcrumb together for some crispy texture.

It took me another 10 minutes to make these, and voila! Seared scallops with cauliflower puree and bacon crumb! A fancy looking entrée which you could find in a fine-dining restaurant, at a fraction of the price.

Honestly this was my first time shaping the puree like a teardrop, a popular plating style that we often see in a restaurant. I often see top chefs doing these easily with the back of their spoons. So I googled how to make this.

I found this video by Helen Rennie in Youtube which showed me how to do it in a super-easy way. However, I have to admit it was not as easy as it looks like! It took me at least ten times of practice just to get a nice teardrop shape. Most of the time it was just a mess and I had to erase the streak and did it all over again.

Ingredients
Seared Scallops
  • 12 pieces of scallops
  • 2 tbsp of olive oil
Cauliflower Puree
  • 250g cauliflower florets
  • 100ml milk
  • 30g unsalted butter, chopped
Bacon Crumb
  • 150g of finely diced bacon
  • ½ cup of panko crumb
Instructions
  1. Place cauliflower and milk in a saucepan and bring to boil. Simmer for 8-10 minutes or until cauliflower is tender, then drain in a colander, discarding the milk. Process cauliflower, butter, salt and pepper in a food processor to form a smooth puree. Transfer to a clean saucepan and keep warm.
  2. Cook the bacon in medium heat for 3 minutes or until brown and crispy. Add panko crumb in the pan and stir quickly until the crumb is golden.
  3. Heat olive oil in the pan over high heat. Season scallops with salt and pepper, then cook for 1 minute each side or until just opaque.
  4. To serve, add three spoonfuls of cauliflower puree on the plate and smear the puree with the back of the spoon. Place three scallops at the edge of each streak and scatter bacon crumb around the puree and on top of bacon. Garnish with microherbs.

Step-by-Step

For cauliflower puree: place cauliflower and milk in a saucepan and bring to boil. Simmer for 8-10 minutes or until cauliflower is tender, then drain in a colander, discarding the milk. Process cauliflower, butter, salt and pepper in a food processor to form a smooth puree.
