Chilli Prawns Linguine

Having a full-time job plus two hours commuting time from and to the office is certainly hard for me! Sometimes I find myself arriving home at 7.30 or 8 pm, feeling hungry and tired, but nobody serves me any dinner. *cry*

Plus I still have to allow more time to work on my precious blog, and also study for CPA. So I am an accountant, a food-blogger and also a student! Honestly, if only we have more than 24 hours in a day, or if I have the ability to sleep less than 7 hours a day, my life would be much easier.

This is the reason why I love quick and easy recipes for my weekdays dinner. I am not bother making something that takes me more than one hour, because I will be eating my dinner by 9pm and completely exhausted by then.

Pasta dish is my favourite meal in weekday nights. Not only easy, for me pasta is an almost fool-proof dish to make. I’m not talking about fresh pasta that you have to make from scratch though. I’m talking just cook some dried pasta in the boiling salted water, toss with some proteins and sauces, and dinner is ready. Very simple, quick, flavourful and comforting. The perfect topping would be seafood as they just take a few minutes to marinate and cook. I am featuring some large prawns as they look sensational here! They are fantastic when combined with garlic and butter, tossed with a bit of chillies to give some kick. I have to say other than creamy carbonara, chilli prawn linguine is my frequent go-to meal for mid-week dinner.

Ingredients
  • 300 grams large prawns, peeled and deveined, tails intact
  • 5 pieces of prawn heads
  • 4 servings of dried linguine
  • 1 teaspoon of olive oil
  • 1.5 cup of white wine
  • 1 cup of fish stock
  • 4 cloves of garlic, finely diced
  • 30g of butter
  • 100 gr bacon
  • 1 red chilli, chopped
  • 1 tablespoon of chilli flakes
  • 250 gr cherry tomatoes
  • 1 teaspoon smoked paprika
  • 1 lemon
  • chopped parsley, for garnish
  • salt and freshly ground black pepper
Instructions
  1. Boil water in the saucepan and sprinkle salt until water is lightly salted and add olive oil. Cook linguine as per packet instruction. Drain pasta in the colander and keep aside.
  2. Heat pan on medium-high and cook bacon for 2 minutes until brown and melt the butter.
  3. Add mince garlic and prawn heads to the pan and cook for 2 minutes, pressing the prawn heads lightly to release the juice. Turn the heat to high and add prawns into the pan, stir to combine for 1 minute.
  4. Add wine and fish stock into the pan and cook for 30 seconds until wine is evaporated. Remove prawn heads from the pan, then add cherry tomatoes and the linguine into the pan and stir until everything is combined. Season with smoked paprika, chilli flakes, salt and pepper.
  5. Serve linguine in a big plate and scatter chopped parsley on the top. Squeeze a bit of lemon for fresher taste.
